2. In a dry blender or food processor, blend the oats until a fine powder. Set aside in a medium bowl.

4. If using food processor, add the oat flour back in. Then add baking powder. Blend until a dough forms.

If using a blender, add the blended ingredients to the medium bowl with the oat flour, scrapping the sides. Add baking powder and mix with a fork until a wet dough is formed.

5. Scoop out 1 tbsp balls with wet hands a roll into a ball. Place on a parchment lined baking tray. Flatten with the back of a fork.

6. Bake for 15min.

7. Optional garnish : drizzle with date syrup

Notes:

Regarding Apricots:

Be sure to buy organic apricots to avoid preservatives (they should be brown, not gold). If apricots are not soft, Cover in a bit of boiled water for about 5 minutes, then strain and use. Medjool dates make an excellent substitute.

Nut Butter

We've used almond butter here as it's not a common allergen and doesn't tend to mold like peanut butter does. If you're fine with peanut butter you can use this. Can also use tahini or sunflower seed butter (don't mold as easily as peanut or cashew).

I always double up the batch because these cookies move QUICKLY.
