Ingredients

1 medium Red onion (finely diced)
6 anchovy Anchovy, canned in olive oil, drained (fillets)
1/4 cup Fennel (fennel and fronds from a head of fennel)
3 tbsp Raisins, seedless (sultana) (soaked in several changes of cold water)
1/2 tsp Saffron (soaked in 1 cup water)
1 1/2 tbsp Tomato paste, canned
1/4 cup Extra virgin olive oil
1/2 cup Slivered almonds (or pine nuts)
2 can Mackerel, canned, drained (boneless and skinless - or 2 fresh sardines, filleted and sauteed)
2 tbsp Bread crumbs, plain (toasted)
2 tbsp Parsley, Italian, fresh (finely chopped)
250 gm Gluten free spaghetti, dry (Quinoa Spaghetti - about 1/2 package - avoid corn or rice spaghetti as these can raise blood sugar)
1/4 tsp Fresh Ground Pepper
1/4 tsp Himalayan sea salt (to taste)

Instructions

  1. For the pasta, fill a medium size pot with water, add a dash of salt and bring to a boil.
  2. Soak tomato paste and saffron in 1 cup of water.
  3. Soak raisins in water to remove sweetness.
  4. In a large saucepan on medium heat, add the olive oil and sauté the onions, fennel and chopped anchovies until onions are translucent (5min).
  5. Add drained raisins and saffron water with tomato paste to the pan. Cook until all water evaporates.
  6. In the meantime, cook the pasta al dente and strain.
  7. Toast the nuts in a dry non-stick pan on medium heat until golden, set aside.
  8. Toast the breadcrumbs in the same pan until just brown, set aside.
  9. Add to the pan with onions, the pasta, drained mackerel fillets, nuts and parsley.
  10. Season with salt and pepper and toss very well (off the heat) to fully incorporate.
  11. Just before serving, add the breadcrumbs, toss lightly and dish out.
