Ingredients


3 cup Oats, dry (uncooked; gluten-free, if necessary)
1 cup Pumpkin purée, canned (all natural)
3/4 cup Peanut butter, smooth (or nut butter of choice)
1/4 cup Maple syrup (or maple syrup)
1 tbsp Pumpkin pie spice
2 tsp Vanilla extract, pure
2 tsp Flaxseed meal (ground)
1/3 cup Pumpkin seeds (pepitas)
1/2 cup Walnuts (chopped)
3/4 cup Dark chocolate chips

Instructions


  1. Prepare a large baking sheet with parchment paper.
  2. Combine all ingredients in a large bowl, stirring after each addition to ensure everything is mixed well. 
  3. Using your hands, roll the batter into balls of about 1 - 1 1/2 inches in diameter. 
  4. After rolling, place each ball on the prepared baking sheet.
  5. Place the full baking sheet in the freezer for at least 1 hour. 
  6. Store in an airtight container and keep frozen for 2 weeks, or refrigerated for up to 1 week.

Notes:

A cookie scoop can be used to help get a nice even ball.
