Ingredients

Oats, dry
(uncooked; gluten-free, if necessary)

1 cup

Pumpkin purée, canned
(all natural)

3/4 cup

Peanut butter, smooth
(or nut butter of choice)

1/4 cup

Maple syrup
(or maple syrup)

1 tbsp
|
Pumpkin pie spice
|
2 tsp
|
Vanilla extract, pure
|
2 tsp
|
Flaxseed meal (ground)

1/3 cup
|
Pumpkin seeds (pepitas)
|
1/2 cup
|
Walnuts
(chopped)

Instructions
- Prepare a large baking sheet with parchment paper.
- Combine all ingredients in a large bowl, stirring after each addition to ensure everything is mixed well.
- Using your hands, roll the batter into balls of about 1 - 1 1/2 inches in diameter.
- After rolling, place each ball on the prepared baking sheet.
- Place the full baking sheet in the freezer for at least 1 hour.
- Store in an airtight container and keep frozen for 2 weeks, or refrigerated for up to 1 week.
Notes:
A cookie scoop can be used to help get a nice even ball.
