1 bunch | Curly kale (stemmed, finely chopped) |
1 tbsp | Avocado oil |
1 tsp | Sea Salt |
1 tbsp | Lemon juice |
1/4 cup | Red onion (minced) |
1/4 cup | Cucumber (finely chopped) |
Put chopped kale into a large bowl, drizzle with oil and sprinkle with sea salt.
Massage gently with hands for 5-10 minutes, until the tough fibers of the kale break down.
Toss with the red onion and cucumber.
