Ingredients


1 tbsp Olive Oil, Extra Virgin
1 small Yellow onion (sliced)
2 medium Tomato (diced)
6 large Egg
6 leaf Basil, fresh (torn)

Instructions


  1. On medium heat, add coconut oil and sliced onions to a 8-10-inch oven-safe/cast iron pan. Sauté for 5-8 minutes until slightly browned and caramelized.
  2. In the meantime, whisk together eggs in a bowl and chop tomatoes
  3. When onions are cooked, sprinkle tomatoes evenly throughout the pan, then add the whisked eggs
  4. Cover with a lid and cook on medium until the bottom starts to stiffen and the top doesn't look so wet.
  5. Once the bottom is cooked (before going brown) add the fresh torn basil, sprinkle with salt and pepper.
  6. Set oven to broil and broil for 5 minutes until the top is cooked. 


Optional: Serve with 2 slices of whole grain bread
