The word esquites comes from the Nahuatl word ízquitl, which means "toasted corn". This is a very popular Mexican Street food.

2 medium ear

Boiled corn
|
2 tbsp

Extra virgin olive oil
|
1/2 medium

Red onion
(diced)

1 pinch
|
Sea salt, fine
(or to taste)

1 tbsp

Cilantro (coriander)
(chopped)

(fresh squeezed)

Korean red chili flakes
(italian dried chili flakes, to taste)

Instructions
- Cut kernels from boiled corn on the cob.
- In a pan, over medium heat, saute the onion in the olive oil until slightly softened
- Add the corn to the pan, sea salt to taste, and cilantro until thoroughly mixed and remove from heat.
- Squeeze the limes over the corn, and add chile powder to taste
- Serve in a cup with a spoon and enjoy!
