The word esquites comes from the Nahuatl word ízquitl, which means "toasted corn". This is a very popular Mexican Street food.

Ingredients


2 medium ear Boiled corn
2 tbsp Extra virgin olive oil
1/2 medium Red onion (diced)
1 pinch Sea salt, fine (or to taste)
1 tbsp Cilantro (coriander) (chopped)
2 fruit Lime (fresh squeezed)
1 tsp Korean red chili flakes (italian dried chili flakes, to taste)

Instructions


  1. Cut kernels from boiled corn on the cob.
  2. In a pan, over medium heat, saute the onion in the olive oil until slightly softened
  3. Add the corn to the pan, sea salt to taste, and cilantro until thoroughly mixed and remove from heat.
  4. Squeeze the limes over the corn,  and add chile powder to taste
  5. Serve in a cup with a spoon and enjoy!
