Esquites
The word esquites comes from the Nahuatl word ízquitl, which means "toasted corn". This is a very popular Mexican Street food.

Ingredients


2 medium ear White corn
2 tbsp Coconut oil
1/2 medium Red onion (diced)
1 pinch Sea salt, fine (or to taste)
1 tbsp Cilantro (coriander) (chopped)
2 fruit Lime (fresh squeezed)
1 tsp Cayenne pepper (to taste)

Instructions


  1. Cut corn kernels from the cob.
  2. In a pan, over medium heat, saute the onion in the olive oil until slightly softened
  3. Add the corn to the pan, sea salt to taste, sauté until softened
  4. Remove from heat, stir in fresh cilantro
  5. Squeeze the limes over the corn
  6. Serve in a cup with a spoon and enjoy!
