The word esquites comes from the Nahuatl word ízquitl, which means "toasted corn". This is a very popular Mexican Street food.

White corn

2 tbsp

Coconut oil

1/2 medium

Red onion
(diced)

1 pinch

Sea salt, fine
(or to taste)

1 tbsp

Cilantro (coriander)
(chopped)

Lime
(fresh squeezed)

Cayenne pepper

Instructions
- Cut corn kernels from the cob.
- In a pan, over medium heat, saute the onion in the olive oil until slightly softened
- Add the corn to the pan, sea salt to taste, sauté until softened
- Remove from heat, stir in fresh cilantro
- Squeeze the limes over the corn
- Serve in a cup with a spoon and enjoy!
