454 gm Orzo, dry
2 small Summer squash (yellow; halved lengthwise)
1 medium Zucchini (halved lengthwise)
1 medium Red onion (quartered)
2 tbsp Olive Oil, Extra Virgin
1/2 tsp Salt (divided)
1/4 tsp Black pepper (divided)
3 tbsp Lemon juice (dressing)
6 tbsp Olive Oil, Extra Virgin (dressing - to taste)
227 gm Mozzarella cheese (smoked; cut into 1/4-inch cubes)
1 1/2 cup Cherry Tomatoes (halved lengthwise)
1/2 cup Basil, fresh (chopped, for salad)
1/2 cup Pine nuts, dried (toasted)

Instructions


  1. Prepare orzo according to package directions. 
  2. Brush yellow squash, zucchini, and onion with olive oil and season with salt and pepper.
  3. Grill vegetables, covered, over medium heat until lightly charred and tender, turning once. Oven option: Broil 4 inches from heat source for 10-12 minutes, turning halfway.
  4. Cool for a few minutes and cut into 1-in. pieces., 
  5. Prepare the dressing in a small bowl by whisking lemon juice and oil until blended. 
  6. In a large bowl, combine orzo, grilled vegetables, mozzarella, tomatoes, basil, and salt and pepper. Add dressing; toss to coat. Sprinkle with pine nuts.

Notes:

More Veggies

  • Add additional vegetables of choice like cucumbers, olives, grilled red peppers, and eggplant.

Vegan

  • Replace cheese with a dairy-free mozzarella or omit.
