Combine oil and vinegar to make the dressing.
In 5 mason jars divide all the ingredients starting with dressing then adding tomatoes, cucumbers, onion, bulgur, feta, and ending with arugula.
Close lid tightly. When ready to eat shake and pour into a bowl.
