Ingredients


1 tbsp Coconut oil (ghee (; for AIP))
3 cup Cremini (Italian) mushroom (sliced cremini)
6 clove(s) Garlic (sliced)
3 sprig Thyme, fresh
1 tsp Himalayan salt
1 tsp Black pepper (tsp; (omit for AIP))
1 dash Nutmeg, ground (pinch)
2 tsp Coconut vinegar (tbsp.)
1 cup Bone broth, Organic
1/4 cup Coconut cream (fat from chilled coconut milk can))
1 cup Cauliflower (riced)
3 cup Spinach (fistfuls of baby)
2 tbsp Nutritional yeast (optional)
2 scoop Collagen peptides (optional)

Instructions


  1. Heat the ghee over medium heat in a medium pot. Once it begins to brown add in the garlic, mushrooms, thyme and seasonings.
  2. Sauté, stirring often, until aromatic and wilted, about 8 minutes.
  3. Add in the coconut vinegar and deglaze the pan, scraping up any goodness that stuck to the bottom of the pot.
  4. Add in the broth and coconut cream and bring to a simmer.
  5. Stir in the cauliflower rice and spinach and cook here for 5 minutes until tender.
  6. Stir in the nutritional yeast and peptides until dissolved.
  7. Serve, sip, enjoy. Feel good!
