1. In a small mixing bowl, whisk together the apple cider vinegar, honey, a pinch of salt, and some pepper. Add the olive oil and stir with a fork to combine.
2. Add the fennel, tangerine (optional), and dried cherries and toss to combine with the dressing. Marinate overnight in an airtight container in the fridge. Enjoy!
