2 tsp Apple cider vinegar
1/2 tsp Honey
1/8 tsp Salt and pepper (to taste)
1 tsp Extra virgin olive oil
1 bulb(s) Fennel (fonds removed, cored, thinly sliced)
1 medium fruit (6cm dia) Tangerine (mandarin), raw (optional)
2 tbsp Dried cherries


1. In a small mixing bowl, whisk together the apple cider vinegar, honey, a pinch of salt, and some pepper. Add the olive oil and stir with a fork to combine.


2. Add the fennel, tangerine (optional), and dried cherries and toss to combine with the dressing. Marinate overnight in an airtight container in the fridge. Enjoy!
