454 gm | Tofu, regular, firm (extra firm) |

1/4 cup | Apple cider vinegar |
1 1/2 tsp | Salt |
1 tbsp | Nutritional yeast |
1 tsp | Oregano, dried |
1 tsp | Garlic powder |
1. Drain liquid from tofu, wrap in a clean drycloth or a few paper towels, and place on aplate with a heavy pot or something heavy to press moisture out. Let sit for at least 30 minutes.
2. Drain away excess water from tofu.
3. Dice tofu into small cubes.
4. Combine vinegar, juice of one lemon, and spices in a shallow bowl.
5. Carefully mix tofu into bowl coating evenly.
6. Place bowl with tofu in fridge to marinate for 1-3 hours or overnight.
7. Stir occassionally to make sure cubes are evenly marinating.
