1. Blend tomatoes, red peppers, coconut milk, fresh basil and garlic powder in a hi-speed blender. If using a Vitamix, blend until hot (about 5-6 minutes).
2. Top with pepitas, fresh basil, and a splash of coconut cream, if desired.
