1 fillet Whitefish (In Canada I liked using wild halibut, but you can try other white fish)
2 tomato Roma tomatoes (diced small)
1/4 medium Red onion (diced small)
1 tbsp Cilantro (coriander) (fresh chopped)
1 pepper(s) Serrano pepper (finely diced)
4 fruit Lime (fresh squeezed)
1/2 tsp Sea Salt (or to taste)
1 dash Black pepper (or to taste)
1 tbsp Extra virgin olive oil


  • Combine all ingredients in a bowl or serving dish.  
  • Ensure the raw fish is sufficiently covered with the lime juice and other ingredients.  
  • The fish will "cook" sort to speak in the acidity of the limes.  Keep this mixture refrigerated for about 1 hour and then serve.  The fish should have turned from opaque to white.
  • optional: chopped avocado


Tastes amazing with some organic blue corn tortilla chips!

Side note:  if you are nervous about using fish raw, you may steam the fillets first then combine with the ingredients.  You may serve this right away, but marinating is a nice way for the flavours to combine.
