Fish Tacos with Avocado Salsa

Ingredients


4 fillet Tilapia (rinsed, patted dry, cut into 8 strips)
2 tbsp Extra virgin olive oil
1/4 tsp Sea Salt
8 medium tortilla(s) Wheat flour tortilla (warmed)
1/2 avocado(s) Avocado (peeled, pitted, diced)
1/2 cup shredded Green cabbage (steamed slightly to soften cabbage)
1 can(s) (15oz) Pinto beans, canned (drained, mashed, and heated slightly with 2 tbsp Cumin)

Instructions


  1. Heat oil in a large non-stick skillet over medium-high heat.
  2. Add fish; cook 3 minutes on each side or until fish flakes with a fork.
  3. Assemble: Place fish in warmed tortillas with 1 tbsp of beans spread onto each tortilla.  Top with the remaining ingredients.

Optional: Squeeze a lime wedge over tacos and enjoy!
