Sugar-free rosemary simple syrup: Combine water, mock fruit, and rosemary in a small saucepan. Over medium heat, stir until the sugar substitute is completely dissolved, about 1 minute. Remove from heat and let cool for 30 minutes. Remove and discard the rosemary sprig. Use immediately or refrigerate for up to 1 week. Recipes make 6 tbsp.
Combine cider, club soda (or seltzer), and 1 tbsp of simple syrup in each highball glass. Garnish with rosemary sprig.
You can use any granulated sugar-free substitute that can withstand high heat such as stevia or erythritol.
Garnish with cherries or apple slices if desired.
