1 can (15oz) Chickpeas, canned, drained (rinsed)
3 large egg Egg
1/2 cup Maple syrup, pure
1/3 cup Cocoa powder, unsweetened
1 tsp Baking soda
3 tbsp Coconut oil (melted)
1 tsp Vanilla extract, pure
1/3 cup Dark chocolate chips


  1. Preheat oven to 350° F and prepare 12 muffin cups by lining with muffin papers or coating with nonstick cooking spray; set aside.
  2. Place chickpeas, eggs, maple syrup, cocoa powder, baking soda, coconut oil, and vanilla extract in blender or food processor; cover. Blend until smooth.
  3. Divide batter among 12 prepared muffin cups.
  4. Top each muffin with about four chocolate chips; push into batter.
  5. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool completely and enjoy!
