Instructions
Mix together the oats, flour, baking powder, baking soda, coconut sugar, and cinnamon in a large mixing bowl.
Make a well in the centre, then add the milk, eggs, and apple cider vinegar and mix well.
Let the mixture sit for at least 10 minutes.
Heat a small fry pan on a medium/low heat with a little butter or coconut oil.
Spoon the mixture into pan and gently spread the mixture around into a circle shape.
Cook for about 1 1/2 minutes, or until the pancake is 3/4 cooked through – then flip and cook for 30-45 seconds.
Serve hot with real maple syrup, berries, and natural yoghurt.
