Ingredients


213 gm Pumpkin puree (1/2 15-ounce can)
1 medium Banana (s) (ripe; peeled)
2 medium Egg
⅓ cup Coconut oil
1/4 cup Honey (raw; or pure)
1 tsp Vanilla extract, pure
2 cup Bob's Red Mill Gluten Free Quick Cooking Oatmeal (rolled)
1 tsp Baking soda
1/4 tsp Baking powder
1/2 tsp Salt (sea)
1/2 tsp Pumpkin pie spice

Instructions


  1. Preheat the oven to 350°F.
  2. Place all the ingredients in a blender and blend until well combined. If making a vegan version of this recipe, substitute 2 tablespoons ground flaxseed mixed with 6 tablespoons of water for the eggs.
  3. Pour the batter into a lined muffin tin; each cup should be 3⁄4 full. Bake for 20 to 22 minutes or until a toothpick inserted in the center comes out clean.
