French Potato Salad

Ingredients


1 tbsp Green onion, scallion, ramp (optional)
5 tbsp Olive oil
1 tbsp Parsley, fresh (chopped or herbs to taste)
4 potato Potato (waxy)
2 tbsp Wine vinegar

Instructions


Scrub the potatoes. Boil in their jackets in salted water until just tender.

Drain and leave to cool just a little.

Cut into 1/4 inch slices. Make the dressing by mixing the oil, vinegar, spring onions/chives together.

Toss lightly with the hot potatoes.

Sprinkle with the chopped parsley.

Serve and enjoy!
