2 medium ear Sweet yellow corn (husked)
2 mango Mango (peeled, pitted, diced)
1/2 medium pepper(s) Yellow bell pepper (diced)
1/2 medium pepper(s) Orange bell pepper (diced)
1 cup Cherry Tomatoes (halved)
1 pepper(s) Red chili pepper (also chile or chilli) (minced)
1/2 medium Red onion (diced)
1/2 cup Cilantro (coriander) (minced)
2 tbsp Rice vinegar
2 whole lime(s) Lime peel (zest)
2 tbsp Lime juice (fresh)
1 tbsp Avocado oil (or olive)


Use sharp knife to cut corn kernels from cobs. Place in large bowl. Add remaining ingredients to bowl with salt to taste and mix well.

Serve immediately or cover and refrigerate until ready to serve, up to 2 days.
