3 medium Tomato (peeled, seeded, chopped)
1 cucumber(s) Cucumber (peeled, seeded, chopped)
1 medium pepper(s) Red bell pepper (chopped)
1 medium Yellow onion (chopped)
3 cup Tomato juice
1 tbsp, leaves Tarragon, fresh (chopped)
1 tbsp Thyme, fresh (chopped)
1/4 cup Red wine vinegar
2 clove(s) Garlic (peeled, finely chopped)
2 tbsp Tomato paste, canned
1/2 whole lemon(s) Lemon juice
1 pinch Kosher salt
1 dash Cayenne pepper (to taste)


In a bowl, reserve 2 tablespoons each of the tomato, cucumber, pepper, and onion to garnish.

In the food processor or blender, purée the remaining ingredients until smooth, adjusting the seasoning to taste with lemon juice, salt, and cayenne pepper.

Cover and chill thoroughly, at least 3 hours but preferably overnight. Adjust the consistency as desired with water.

Serve in chilled bowls garnished with the reserved vegetables.
