2 cup | Broccoli florets (chopped in food processor) |
3 tbsp | Ghee (divided) |
1 small | Red onion (chopped) |
1 large | Carrots (shredded) |
1 tsp | Celtic sea salt |
2 medium | Egg (lightly beaten) |
2 tbsp | Coconut aminos, Coconut Secret (a soy sauce alternative) |
In a high-powered blender, pulse broccoli until it resembles grains of rice, being careful not to over process.
In a skillet over medium heat, cooked "riced" broccoli with onion and carrot in 3 tbsp of the ghee, stirring occasionally, until tender. Season with salt and pepper to taste. Keep warm.
In another skillet over medium heat, melt remaining ghee. Add eggs and stir to scramble them and chop finely. Immediately add to broccoli. Stir to combine.
Stir in coconut aminos, warm through, and serve immediately.
