Blend the vegetables in a food processor
In a large bowl, whisk the egg. Set aside.
In a large skillet, heat the olive oil over medium heat. Add the blended or chopped vegetables, onion, bell pepper etc and salt. Add the whisked egg.
Stir the mixture to scrambled or leave it to set as an omelette.
Eat with 1-2 slice of yam or bread for a satisfying breakfast!
