Almond Butter Fruit Quesadillas

A sweet and salty twist on the quesadilla. Perfect for kids and back-to-school!


12 medium Strawberries
1 medium Banana (s)
3 medium tortilla(s) Tortilla, gluten-free (or Whole Wheat if you prefer)
3 tsp Almond butter
1/2 tsp Cinnamon


  1. Slice the strawberries and bananas into 1/2 cm thick slices and set aside.
  2. Heat a large frying pan to medium-low heat.
  3. Place the tortilla on the frying pan.  Add one teaspoon of nut butter to the center of the tortilla.  Then, add one-third of the banana slices and one-third of the strawberry slices.  Sprinkle with a pinch of cinnamon. 
  4. Heat the loaded tortilla until it is light brown and the nut butter is soft and warm. Then, fold the tortilla in half to create a quesadilla.
  5. Repeat Step #3 and #4 for each tortilla. Let cool and serve.
