Nut Butter and Fruit Quesadillas

A sweet and salty twist on the quesadilla. Perfect for kids and back-to-school!

Ingredients


5 medium Strawberries (sliced)
1 medium Banana (s)
1 large tortilla(s) Whole wheat tortilla (or gluten-free)
1 tbsp Almond butter (or nut butter of choice)
1/2 tsp Cinnamon

Instructions


  1. Slice the strawberries and bananas into 1/2 cm thick slices and set aside.
  2. Heat a large frying pan to medium-low heat.
  3. Place the tortilla on the frying pan.  Add nut butter to the center of the tortilla. Then, add the banana and strawberry slices to one half of the tortilla. Sprinkle with a pinch of cinnamon. 
  4. Heat the loaded tortilla until it is light brown and the nut butter is soft and warm. Then, fold the empty side of the tortilla over the fruit-covered side to create a quesadilla.
  5. Let cool and serve. 


Notes:

  • This recipe works well with any nut or seed butter and is great with most types of fruit, especially berries and bananas. Chia jam also works nicely in place of fruit.
