Garbage Stir-Fry With Curried Cabbage

One of my favorite weeknight, budget-friendly, and versatile dishes is a fragrant and zesty Garbage Stir-Fry with ground meat, curry, and cabbage!


1 tbsp Ghee (or fat of choice)
1/2 large White onion (diced)
454 gm Pork, ground, lean (or lamb; or whatever high-quality meat you prefer)
2 tsp Madras curry powder
1 pinch Kosher salt
1 dash Black pepper (freshly ground)
1/2 medium head Green cabbage (thinly sliced)
1/2 whole lime(s) Lime juice (fresh)


  1. Heat the ghee in a large cast iron skillet, and cook the onions until they’re soft and translucent.
  2. Add the ground meat to the onions in the skillet.
  3. Break it up with a wooden spoon, and stir-fry until the pink’s gone.
  4. Sprinkle the curry powder on the contents of the skillet, and season with salt and pepper to taste. Stir to incorporate.
  5. Toss in the cabbage, and cover and cook for 2 minutes or until the cabbage softens.
  6. Add a spritz of lime juice, and taste and adjust the seasonings as desired. Done and done!
