1 large Egg
2 large egg Egg yolk
1 tbsp Apple cider vinegar
1 whole lime(s) Lime juice (fresh)
200 ml Macadamia nut oil (1 cup; or refined avocado oil; refined olive oil needs to be light-tasting as not to overpower; flavour)
1 tsp Paprika
1/4 tsp Cayenne pepper
1/4 tsp Cumin (ground)
11 clove(s) Garlic (roasted)

Instructions


  1. Using a countertop blender, add the eggs, apple cider vinegar and lime juice and mix just enough to combine.
  2. Have the blender running on a medium speed and very slowly pour in the oil, taking at least 2 minutes to add all of the oil into the blender - this is really important for it to thicken properly.
  3. After all of the oil has been added, continue to blend until the mixture reaches a consistency of mayonnaise then add the spices and roasted garlic
  4. Store in an airtight container in the fridge
