Garlic Parmesan Roasted Potatoes

1 1/3 kg Red mini potato (halved)
3 tbsp Extra virgin olive oil
5 clove(s) Garlic (minced)
1 tsp, leaves Thyme, dried
1/2 tsp Oregano, dried
1/2 tsp, ground Basil, dried
1/3 cup Parmesan cheese, shredded (freshly grated)
1 pinch Salt and pepper (to taste)
2 tbsp Butter, unsalted
1/4 cup Parsley, fresh (chopped)


Preheat oven to 400°F. Lightly oil a baking sheet or coat with nonstick spray.

  1. Place potatoes in a single layer onto the prepared baking sheet.
  2. Add olive oil, garlic, thyme, oregano, basil, and parmesan; season with salt and pepper, to taste. Gently toss to combine.
  3. Place into oven and bake for 25-30 minutes, or until golden brown and crisp. Stir in butter until melted, about 1 minute.
  4. Serve immediately, garnished with parsley.
