Zucchini
(cut into 3-in length)

1 large

White onion
(chopped)

Garlic
(crushed)

Extra virgin olive oil

Mint, fresh
(chopped)

Instructions
- Steam zucchini until soft, drain water and mash with a masher.
- In a heavy bottomed pan sauteé onions until translucent then add garlic and cook for a minute or two.
- Add mashed zucchini and mint, and season to taste.
- Cook for 5 minutes and spoon into bowls.
