Gluten Free Banana Bread in a Mason Jar

2 tbsp Almond butter
1/4 tsp Baking powder, gluten-free
1/2 medium Banana (s) (mashed)
2 tbsp packed Brown sugar
1/2 tbsp Coconut flakes
2 tbsp Coconut flour
1/4 cup Coconut milk, reduced fat
2 tbsp Dark chocolate chips
1 tbsp Pecans (crushed)


1. Combine dry ingredients: coconut flour, brown sugar and baking powder in a small bowl and mixed until they were combined.

2. Add the mashed banana, almond butter and milk into the same bowl.

3. Combine both of the dry and wet ingredients together and once the mixture is free of lumps, add the toppings: chocolate chips, pecans and shredded coconut.

4. Place mixture into a half pint mason jar and put in the microwave for 2 1/2 minutes.
