30 gm Chia seeds, ground
100 ml Water
350 gm Quinoa, uncooked
3 1/2 cup Water (for quinoa)
1/2 tsp Baking powder, gluten-free
150 ml Water
1 tbsp Extra virgin olive oil
1 pinch Salt
1/2 whole lemon(s) Lemon juice


Mix 30g of chia seeds with 100ml of water.

Cook 350g of quinoa with 3x volume of water for 3 minutes.

Combine the chia and quinoa together with 1/2 tsp of baking powder, 150ml water, 1tsp of olive oil, salt and juice of half a lemon.

Poor mix into a baking tin.

Bake for 1 hour or until the bread is firm.
