Gluten-Free Pumpkin Apple Bites

1/4 cup Applesauce, unsweetened
1/4 cup Coconut oil (melted)
2 medium Egg
1/4 cup Honey
1 cup Pumpkin purée, canned
1 1/2 tsp Vanilla extract, pure
1 cup Almond flour/meal, Bob's Red Mill (or whole wheat flour)
1 cup Rolled oats- Gluten Free
1 tsp Baking powder
1/2 tsp Baking soda
2 tsp Cinnamon
1 tsp Pumpkin pie spice
1/4 tsp Sea Salt
1 medium Apple (grated, or finely chopped)
1 cup Walnuts (chopped; optional)


  1. Preheat oven to 350 degrees F and prepare muffin tins by coating with coconut oil, or lining with baking cups.
  2. In a large bowl, combine the applesauce, coconut oil, eggs, honey, pumpkin puree, and vanilla extract.
  3. In a medium-sized bowl, mix together the flour, rolled oats, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt.
  4. Stir the dry ingredients into the wet ingredients until well combined.
  5. Fold in chopped apples and walnuts (optional).
  6. Spoon batter into lined/greased muffin tins and bake for 25-30 minutes. The muffins should be moist and have a consistency similar to bread pudding.
