Ingredients


2 can, drained Salmon, sockeye (red), canned, drained (each 6 oz)
1/2 cup Almond flour/meal, Bob's Red Mill
2 large Egg (beaten)
1/4 cup Green onion (finely chopped)
1/4 cup Red bell pepper (or yellow or orange, finely chopped)
2 tbsp Parsley, fresh (or 1 tbsp dried)
1 tsp Garlic powder
0 dash Salt and pepper (to taste)
1 tbsp Extra virgin olive oil (or avocado; for cooking)

Instructions


For Stovetop:
1. In a large bowl, mix the salmon, almond flour, eggs, onion, bell pepper, parsley, garlic powder, salt, and pepper.
2. Form the mixture into patties using a ¼ cup measure.
3. Heat oil in a skillet over medium heat and cook the patties on each side for 4-5 minutes until golden and cooked through.
For Oven:
1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
2. Prepare the patties as above and place them on the baking sheet.
3. Bake for about 15-20 minutes, flipping halfway through, until the patties are golden and cooked through.
