Golden Coconut Chicken Lentil Soup

Wonderful golden chicken lentil soup made with creamy light coconut milk, turmeric, ginger, garlic, and cumin. Perfectly flavored and packs a protein punch.

Ingredients


2 tsp Olive Oil, Extra Virgin
3 clove(s) Garlic (minced)
1 small White onion (roughly chopped)
2 large Carrots (sliced)
1 tbsp Ginger root (freshly grated)
3/4 tsp Turmeric, ground
3/4 tsp Cumin
1/4 tsp Cayenne pepper
3 cup Chicken broth (stock) (low-sodium)
1 can(s) (15oz) Coconut milk, sweetened (15 oz) can light)
1 cup Brown lentils, raw (rinsed well)
2 cup Chicken breast, boneless, skinless (shredded cooked; (about 3/4 pound)
1/2 tsp Salt (plus more to taste)
1 dash Black pepper (Freshly ground)
1 sprig Cilantro (coriander) (For garnish: fresh chopped)

Instructions


  1. Add olive oil to a large pot and place over medium high heat. Once oil is hot, add in garlic, onion and carrots; saute for 5 minutes, stirring occasionally. Then stir in ginger, turmeric, cumin and cayenne pepper. 
  2. Allow spices to cook with the carrots and onions for 30 seconds then add in chicken broth, coconut milk, lentils, shredded chicken, salt and black pepper.
  3. Bring soup to a boil, then reduce heat to low and simmer uncovered for 30-45 minutes until lentils are cooked and soup thickens. Taste and adjust seasonings as necessary. 
  4. Pour into bowls, or individual containers for meal prep. Soup is wonderful when garnished with cilantro. Serves 4.
