Golden Goat Cheese Crostini with Broccolini

The perfect appetizer for a dinner party, or family feast. You can make this appetizer the day before, then toast the bread right before serving!

Ingredients


1 bundle Broccolini, baby broccoli (or broccoli, trimmed into small florets)
2 tbsp Olive Oil, Extra Virgin
1/2 tsp Salt
142 gm Goat cheese, soft
1/2 tsp Turmeric, ground
1/2 tsp Garlic powder
1/2 tsp Black pepper (ground)
1 baguette Baguette, whole grain (cut in 1/2 inch slices on the diagonal)

Instructions


  1. Preheat oven to 400 degrees F and line two baking sheets or pans with parchment paper.
  2. Cut broccolini into small florets, and toss with olive oil and salt. Place broccolini florets onto the first baking sheet/pan and bake for 20 minutes, turning halfway through, until tender and browned.
  3. Meanwhile, add goat cheese, turmeric, garlic powder, black pepper to a food processor and mix until smooth. Set aside.
  4. Place baguette slices onto the second baking sheet/pan.
  5. When the broccolini is done, set aside and place the second pan, with the baguette slices, in the oven. Bake for 6-10 minutes, until golden brown. Let cool.
  6. To assemble, spread goat cheese mixture (a good tablespoon or more, don’t skimp) on top of toasts, then top with broccoli. Serve.
