Grain-Free Banana Muffins

Ingredients


2 large Banana (s) (or 3 medium --very ripe)
1 cup Almond butter (or other nut/seed butter)
2 large Egg
1 tbsp Maple syrup, pure (more or less)
1 tsp Vanilla extract, pure
1/2 tsp Baking soda
1 tsp Apple cider vinegar
1/4 cup Dark chocolate chips, vegan (or nuts if desired)

Instructions


  1. Preheat oven to 400 degrees
  2. Place all ingredients except chocolate chips into blender or food processor
  3. Blend until well mixed. Batter will be sticky
  4. Stir in chocolate chips
  5. Pour batter into greased or lined muffin tins 
  6. Bake at 400 for 12-13 minutes or until golden brown and the tops spring back 
  7. Let cool and enjoy!!

Make approximately 10 large muffins.

Notes:

option to make mini muffins- adjust baking time to 8 minutes
