Grain Free Chocolate "Rice" Pudding

Ingredients


4 cup Cauliflower (blended into rice consistency)
2 cup Coconut milk
1 tsp Cinnamon
1 tsp Vanilla extract, pure
1/3 cup Maple syrup, pure
1/4 cup Chia seeds, ground
2 tbsp Cacao powder, raw
1 tbsp Maca powder

Instructions


Add all ingredients to a medium pot and mix well.

Bring to a boil and then lower heat to a simmer for 10 - 12 minutes, stirring occasionally, until cauliflower rice is tender and the mixture is the consistency of pudding.

Serve warm or chill in the refrigerator and serve cold.
