To prepare mixed grain pilaf, combine all ingredients except the flax in a medium saucepan. Bring to a boil, reduce heat and allow to simmer for 15 minutes, or until all the water is absorbed and the grains are soft. Remove from heat, add the flax and fluff mixture with a fork.
Preheat oven to 350F.
In a medium bowl combine the mixed grain pilaf, almond flour, and chocolate chips.
In a large mixing bowl combine the rest of the ingredients. Allow to sit for a few minutes to allow the flax to become glutinous.
Mix the dry ingredients into the wet ingredients.
Using clean hands, form the dough into balls and place on a baking sheet lined with parchment paper.
Bake for 12 minutes. Cool for 3 minutes on the pan before transferring to a wire cooling rack.
