1 1/2 cup Rolled oats- Gluten Free
1/2 cup Almond butter
1 tsp Vanilla extract, pure
1 1/2 tsp Cinnamon
2 tbsp Almond milk, unsweetened ((or any plant based milk)))
2 tbsp Avocado oil
43 gm Sugar Free Maple Syrup (equals to 3 tbsp (Best is ChocZero brand))
1 dash Salt
2 cup Yoso Plain Unsweetened Coconut Yogurt (or any yogurt you prefer)
3 scoop Protein Powder, Vega Sport, vanilla (or your choice protein)
2 tsp Vanilla extract, pure
57 gm Sugar Free Maple Syrup (equals to 4 tbsp)
1 cup Mixed berries (frozen)
29 gm Sugar Free Maple Syrup (2 tbsp)
1 tbsp Lemon juice

Instructions


  1. First, prepare the granola base. In a large bowl, combine the almond butter, vanilla, cinnamon, almond milk, avocado oil, maple syrup, and salt. Mix until well combined and then stir in the oats.
  2. Line an 8 x 12 baking dish with parchment paper and spray the paper with nonstick cooking spray. Press the granola mixture into the baking dish--the mixture will be on the sticky side, so you can use wet hands to help spread the mixture evenly.
  3. Place the baking dish in the freezer while you prepare the yogurt and berries.
  4. Add the frozen berries, maple syrup, and lemon juice to a pot over the stove. Heat over medium heat until you can gently mash the fruit with a wooden spoon (leave some chunks if you want). Remove from the heat and allow to cool slightly while you prepare the yogurt.
  5. Add the yogurt, vanilla, protein powder and maple syrup to a small mixing bowl and mix until combined.
  6. Remove the granola base from the freezer and spread the yogurt evenly over the base. Dot the yogurt with the fruit and use a butter knife to gently swirl the fruit into the yogurt.
  7. Place the baking dish in the freezer again to completely set--about 1-2 hours, or until the yogurt is solid.
  8. Remove from the freezer, cut into squares and enjoy! Store bars in the freezer, with parchment paper in between cut slices to prevent them from sticking. (makes about 16-24 pieces, depends on how you cut it)
