These homemade Granola Squares are jam-packed with dried fruit and seedy goodness! The perfect bite-sized snack to take on the go for an afternoon pick-me-up!

1/2 cup pitted
Dates
1/2 cup
Figs, dried
2 tbsp
Chia seeds, ground
1/4 cup
Coconut milk, sweetened
(or almond milk)
3/4 cup
Oats, large flakes, dry
1/3 cup
Coconut oil
1/3 cup
Water
1 tsp
Cinnamon
1/4 cup
Oat flour
2 tbsp
Pumpkin seeds (pepitas)
2 tbsp
Sesame seeds
2 tbsp
Sunflower seeds
1 tsp
Vanilla extract, pure
Instructions
Preheat the oven to 350 degrees F and line an 8x8 baking dish and small baking sheet with parchment paper. Set aside.
Soak the dried dates and figs in a bowl of hot water to let them soften.
Add the chia seeds to a small cup or dish with the milk and stir. Let them sit to expand (at least 5 minutes). You may need to stir once or twice while it thickens.
Once the oven is preheated, spread the large flake oats on the baking sheet, and toast for 10-15 minutes, until light brown.
Meanwhile, in a small saucepan, heat the coconut oil until melted. Set aside to cool.
Drain the water from the dates and figs.
Add the fruit to a blender with the amount of water indicated in the ingredient list. Blend until smooth, or slightly chunky. Scrape the sides, add a touch more water, if needed, and blend again.
Add the date and fig mixture, soaked chia seed mixture, toasted oats, melted coconut oil, cinnamon, oat flour, pumpkin seeds, sesame seeds, sunflower seeds, and vanilla extract to a large mixing bowl and stir well to combine.
Pour the mixture into the prepared baking dish and smooth out the top.
Lower oven temperature to 275 degrees F and bake for 40-45 minutes.
