Greek Green Beans in Tomato Sauce

Ingredients


1 tbsp Extra virgin olive oil
1 medium Yellow onion (diced)
2 clove(s) Garlic (cchopped)
1/8 tsp Red pepper flakes (to taste)
1 can(s) (28oz) Diced tomatoes, canned
454 gm Green/yellow string beans, raw (trimmed, but into pieces)
1/2 tsp Oregano, dried
1 pinch Salt and pepper
1/2 cup Parsley, Italian, fresh (chopped)
1/2 cup Dill, fresh (chopped)
1/2 cup, crumbled Feta cheese (optional)

Instructions


Heat the oil in a large sauce pan over medium heat.

Add the onions and saute until tender, about 5-7 minutes.

Add the garlic and pepper flakes and saute until fragrant, about a minute.

Add the tomatoes, green beans, oregano, salt and pepper and simmer until the beans are soft, about 40 minutes.

Remove from heat, mix in the dill and parsley and serve garnished with feta.
