This Greek Salad is a great way to use leftovers!

Ingredients


2 cup Lettuce, romaine (or any leafy greens)
1 tbsp Green onion
114 gm Chicken breast, boneless, skinless, grilled (cooked and sliced)
1/2 cup chopped Red bell pepper
8 small grape tomato(s) Grape tomato (s) (or 1/2 cup diced tomatoes)
1/2 cup Cucumber (diced)
1 heart Artichoke hearts, canned (quartered)
5 olive(s) Kalamata olives (green or black)
29 gm Goat feta cheese (or 1 tablespoon)
1 tbsp Apple cider vinegar
1 tsp Balsamic vinegar glaze, Giant (drizzled)

Instructions


On a plate or in a bowl assemble the prepared salad ingredients in the following order: Salad Greens, green onions, cooked chicken breast, peppers, tomatoes, cucumbers, artichoke, olives, and feta. When ready to serve, drizzle apple cider vinegar & olive oil and finish with balsamic glaze. Can be prepared ahead of time and refrigerated.
