284 gm Pork, ground, lean
2 1/4 tbsp Parsley, fresh (chopped)
2 1/4 tbsp Mint, fresh (chopped)
3/4 tsp Oregano, dried
1/4 tsp Sea Salt
1/2 whole lemon(s) Lemon peel (zest)
1/4 cup Yoso Plain Unsweetened Coconut Yogurt
1/2 cup Jasmine rice, dry
1/2 cup Chicken broth (stock)

Instructions


  1. Preheat the oven to 425ºF (218ºC) and line a baking sheet with parchment paper.
  2. In a large bowl, add the ground lamb, parsley, mint, oregano, sea salt and lemon zest. Mix well using your hands. Roll into balls roughly the size of a golf ball and place on the baking sheet. Cook for 15 to 20 minutes. Remove and serve with coconut yogurt as a dip.
  3. Serve with jasmine rice cooked in chicken stock. Enjoy!
