Ingredients


1 cup White onion (finely chopped)
1/3 cup Dill, fresh (chopped)
1/3 cup Olive Oil, Extra Virgin
1 1/2 tsp Salt
1 tsp Black pepper (ground)
1 1/2 tbsp Oregano, dried
3 cup Green peas, raw (or thawed from frozen (not canned))
1/3 cup Tomato paste, canned
2 cup Water, filtered

Instructions


  1. Finely chop the onion and dill.  In a small bowl, crush the oregano with a mortor and pestle, or a fork.
  2. Heat a medium saucepan to medium-low.  Add the olive oil, then the onions.  Gently sauté until almost translucent.
  3. Add salt, fresh ground pepper, crushed Greek oregano and fresh chopped dill to saucepan. Stir to incorporate completely.  Turn to a low heat and cook for only 3-4 minutes.
  4. Add peas to the saucepan.  Stir well and cook for an additional 3-4 minutes.
  5. Dissolved the tomato paste in 2 cups of warm water.  Add to the saucepan
  6. Add an additional 2 cups of water.  Mix well.
  7. Raise heat to high to bring mixture to a boil. Boil for about 3 minutes.
  8. Reduce heat to low and cook, covered, for 40 minutes.
  9. Serve immediately or let cool and refrigerate.

Notes:

  • When reheating, add 2 tablespoons of water for every cup of peas and reheat, covered, on low.
  • Use 1/4 cup of tomato paste if you like less tomato flavour.
  • Can be refrigerated, covered, for up to 5 days.
