Greek Protein Scramble

Ingredients


1 tbsp Butter, grass fed, unsalted (for cooking)
86 gm Turkey breast (cooked and diced)
1 large Egg (lightly beaten)
57 gm Feta cheese, whole milk, crumbled (cubed or crumbled)
1/4 cup chopped Olives (any variety)
1 tbsp Parsley, Italian, fresh (chopped fine)
3 leaves Kale (chopped and sauteed to your liking (optional))

Instructions


  1. Preheat cast iron skillet to medium. Once heated, add the butter or ghee.
  2. Once melted, add the cooked turkey. Sautee for 2-3 minutes until warmed. Add the egg, and scramble gently. Salt and pepper to taste.
  3. Once the egg is cooked to your liking, remove from skillet. Add feta, olives and parsley and enjoy!


Serve over lightly sauteed greens for a heartier meal!
