Ingredients

Butter, grass fed, unsalted
(for cooking)

Turkey breast
(cooked and diced)

Egg
(lightly beaten)

Feta cheese, whole milk, crumbled
(cubed or crumbled)

1/4 cup chopped
|
Olives
(any variety)

1 tbsp
|
Parsley, Italian, fresh
(chopped fine)

3 leaves
|
Kale
(chopped and sauteed to your liking (optional))

Instructions
- Preheat cast iron skillet to medium. Once heated, add the butter or ghee.
- Once melted, add the cooked turkey. Sautee for 2-3 minutes until warmed. Add the egg, and scramble gently. Salt and pepper to taste.
- Once the egg is cooked to your liking, remove from skillet. Add feta, olives and parsley and enjoy!
Serve over lightly sauteed greens for a heartier meal!
