Ingredients


3 cup Baby spinach
1/2 cup chopped Tomato
1/2 cup Cucumber (peeled and sliced cucumber)
1/2 cup Red onion
142 gm Chicken breast, boneless, skinless, grilled (or 1/2 cup white kidney beans)
2 tsp Extra virgin olive oil
1 tbsp Balsamic vinegar
1 dash Oregano, dried
4 large Black olives (pitted)
1/4 cup, crumbled Feta cheese (optional)

Instructions


1. Mix spinach, tomatoes, sliced onions, cucumbers and olives in a large bowl.

2. Top with grilled chicken (ready cooked) or kidney beans (canned and drained)

3. Add oil, vinegar and oregano and toss.

Notes:

For more healthy fats - add a tablespoon of hemp seeds sprinkled on top!

Chicken

Spinach

contains twice as much iron than other leafy greens, and is high in some B vitamins!
