        | 3 cup | Baby spinach | 
| 1/2 cup chopped | Tomato | 
| 1/2 cup | Cucumber (peeled and sliced cucumber) |

1. Mix spinach, tomatoes, sliced onions, cucumbers and olives in a large bowl.
2. Top with grilled chicken (ready cooked) or kidney beans (canned and drained)
3. Add oil, vinegar and oregano and toss.
For more healthy fats - add a tablespoon of hemp seeds sprinkled on top!
