Greek Style Green Beans

A delicious side of beans, very high in folate!


2 tsp Ghee (or extra virgin olive oil)
1 medium White onion (cut in half and into 1/2-inch slices)
2 clove(s) Garlic (minced)
454 gm Green/yellow string beans, raw (trimmed)
1 can(s) (14oz) Diced tomatoes, canned
1/2 cup Water
3 tbsp Parsley, fresh (chopped)
2 tbsp Dill, fresh (chopped)


1. Heat ghee in a large sauté pan over medium heat.


2. Add onion and cook for 4 minutes or until onions start to soften. Add garlic and cook for 1 minute more. Add green beans, tomatoes and water and cook covered, for 7 minutes.

3. Stir in parsley and dill and remove from heat. Serve warm.



Quick Tip:

To save time trimming the beans, simply line up all the stem ends and trim in one cut with a chef 's knife.
