A fun twist on a lunchtime classic! This sandwich is quick and easy to prepare and the grapes and apple add a pleasing crunch and a hint of sweetness!
Ingredients

Chicken breast, roasted
(shredded)
1/2 cup
Red onion
(diced)
1/2 cup chopped
Apple
2/3 cup
Red grape
(halved)
1/3 cup
Cranberries, dried
(optional)
1/4 cup
Slivered almonds
0 ml
Greek yogurt, plain, 2% M.F.
1 tbsp
Lemon juice
(freshly squeezed, to taste)
1/2 tsp
Garlic powder
1 pinch
Sea Salt
(to taste)
1 dash
Black pepper
(to taste)
4 medium slice
Ciabatta Bread
(or bread of choice; toasted)
Instructions
In a large bowl, add the shredded chicken, red onion, apple, grapes, dried cranberries, slivered almonds, Greek yogurt, lemon juice, garlic powder, sea salt, and pepper, to taste. Stir well to combine.
Toast bread, if preferred, then top with chicken salad mixture.
Enjoy open-faced, or as a full sandwich.
